Deliciously light and perfect for your Valentine!
Preheat the oven to 180C on fan bake. Line two 23cm round pans (or one larger pan if you are making a single layer cake)
In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk and oil. Stir in the boiling water and ensure that all ingredients are mixed well. Gently fold through the cherries
Pour the batter evenly into the lined pans
Bake for 20-25 minutes or until a toothpick inserted into the centre comes out clean
Cool in the pan for 5 minutes before placing onto a wire rack to cool completelyPrint Recipe
