Cauliflower Fried Rice

Method

To prepare the cauliflower, shred the cauliflower using the grater or pulse in the food processor until it looks like rice

Heat 1 tablespoon of sesame oil in a large fry pan. Add the carrots and garlic and stir fry for 5 minutes. Add the cauliflower, edamame or peas and remaining sesame oil

Stir fry for a couple of minutes until the cauliflower is soft – but not soggy

Make a well in the middle of the stir fry and add the eggs. Stir gently until the eggs are cooked

Add the soy sauce, green onions and a squeeze of lemon juice before serving. Best served warm
