Kūmara Stuffed with Sautéed Kale and Parmesan

Method

Preheat oven to 180˚C

Prick kūmara with a fork and bake until cooked through (about 30 to 35 minutes)

While kūmara is baking sauté kale in olive oil, garlic and chilli flakes (add a couple tablespoons of water to help wilt the kale)

Split cooked kūmara down the middle while still warm and stuff with kale

Sprinkle with a little parmesan and serve

NB:

·Cooking time will depend on size of kumara

·Choose kūmara of similar size to ensure they are cooked through at the same time
